All I can offer is sympathy. I tried to make an amigurumi critter with eyelash yarn. I think I may have done two whole rounds before I gave up! It was soooo cute in the photo, too.
If gauge isn't that important (like for a blanket) using a large hook helps. You can see and feel the stitching much better. However, if gauge is important like for a clothing pattern I would recommend using stitch markers more frequently (every 10 stitches or so) as you go along so you can keep track of those hard to see stitches in all that fluffy softness.
